This bowl contains lots of fiber, plant-based protein, and healthy fats!

▶Ingredients:
-2 cups Bibb lettuce
-1/2 cup quinoa -1/2 cup roasted carrots -3/4 cup roasted broccoli
-1/2 cup smoked paprika chickpeas
-2 Tbsp pepitas (aka pumpkin seeds)
-a few slices of watermelon radish

▶ Directions:
Combine and drizzle with dressing
