Summer is officially here!
That means smoothie bowls, summer fruits & chia pudding instead of oatmeal for breakfast all season long and big salad bowls for dinner. Do you eat differently in summer?

✭ RECIPE ✭
for pink chia pudding:

30ml beetroot juice
200ml coconut-rice milk
200ml water
60g chia seeds
Sweetener of your choice.

>>> Mix all ingredients in a bowl (with lid). Stir well again after a few minutes to avoid clumping, then transfer the bowl to your fridge and let the chia pudding soak overnight or for 24 hours. Sometimes I mix in some extra plant milk the next day to make it creamier – the consistency depends on your preference!

Toppings: Fruit, cedar nuts, sweet coconut-almond butter
