If you’ve ever meal prepped before, you’ll know how life-changing it can be. An hour or two in the kitchen once a week can make all the difference to your food choices throughout the week. Whether it’s coming home to a healthy dinner after a stressful work day or a having nutritious breakfast waiting in the morning – meal prep just makes everything easier. That said, if you’re not a seasoned chef or even just someone who ventures into their kitchen very much, many meal prep recipes might turn you off. You might be on Pinterest just looking for a simple stir fry to make for the week. Before you know it, you’re expected to have 14 different types of herbs, 3 obscure ingredients you’ve only seen in the health food store and a type of noodles you’ve never even heard of. 

A simple meal prep is often the best meal prep. 

That’s why I’ve compiled this list of easy meal prep recipes that contain eight ingredients or less. 

Warning: when I say eight ingredients, I have left out a few common ingredients like salt and pepper as well as non-essential ingredients like dried herbs. If you haven’t got them in the cupboard, don’t stress. If you do have them lying about – throw them in.
